Ingredients
  

  • 2 pounds pork shoulder or CHICKEN cut into 1 inch cubes
  • Salt
  • Pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • ¹/₂ teaspoon ground cinnamon
  • 2 cups chicken broth
  • ¹/₄ cup distilled white vinegar
  • 1 tablespoon brown sugar
  • 2 cups tomato diced
  • 2 teaspoons Ground Coriander
  • 1 tablespoon ginger chopped
  • 1 tablespoon garlic chopped
  • 1 cup onion chopped

Method
 

  1. Season the pork cubes with salt and pepper.
  2. Turn the Instant Pot on the Sauté setting and add oil.
  3. Add pork cubes and brown on all sides, approximately 3-4 minutes, then remove to a plate.
  4. Add onions, garlic, and ginger into the pot, cook until onions are softened.
  5. Stir in spices and cook until fragrant.
  6. Add the browned pork back into the pot.
  7. Add tomatoes, sugar, vinegar, and broth to the pot and stir.
  8. Close the lid and set the Instant Pot to pressure cook for 30 minutes.
  9. After cooking, let the pressure naturally release.
  10. Serve hot with basmati rice or naan bread.
