Brown first, finish in the sauce
The chicken’s first visit to the pan is for color, not doneness. Take it out while the onions soften, then return it to the simmering tomato sauce. Check the thickest pieces reach the federal poultry minimum of 165°F. Give the tomato paste and seasoning their brief cooking step before adding liquid.
Taste the vinegar with rice
Make the final seasoning decision with a spoonful of curry and rice. Add vinegar only a teaspoon at a time if more tang is needed. Keep the drained cucumber alongside the curry instead of tipping its pickling liquid into the bowl.

- Start the basmati rice according to its package directions.
- Make the quick-pickled cucumber: combine the sliced cucumber with 2 tablespoons apple cider vinegar, the sugar, and 1/4 teaspoon salt. Toss well and refrigerate while the curry cooks.
- Pat the chicken dry and season it with 1/4 teaspoon salt. Heat the neutral oil in a deep skillet over medium-high heat. Brown the chicken in a single layer for 3 to 4 minutes; it does not need to cook through. Transfer it to a plate.
- Reduce the heat to medium. Add the onion and remaining 1/2 teaspoon salt. Cook for 8 to 10 minutes, stirring regularly, until golden and substantially softened. Add a small splash of water if the browned bits threaten to burn.
- Add the garlic and ginger and cook for 30 seconds. Add the Vindaloo Curry Seasoning and tomato paste. Cook for 60 to 90 seconds, stirring constantly, until fragrant and the tomato paste darkens slightly.
- Add the crushed tomatoes, stock, and 1 tablespoon apple cider vinegar. Scrape up the browned bits and simmer uncovered for 5 minutes.
- Return the chicken and any juices to the skillet. Simmer uncovered for 10 to 12 minutes, stirring occasionally, until the chicken is cooked and the sauce coats a spoon. Stir in the optional coconut milk during the final 3 minutes if you want a rounder, slightly milder sauce.
- Taste the curry with a spoonful of rice. Correct salt first, then add apple cider vinegar 1 teaspoon at a time only if it needs more vindaloo tang. Add more Vindaloo Curry Seasoning if it needs greater heat or spice intensity.
- Spoon the rice into bowls, add the vindaloo, and top or serve alongside the drained pickled cucumber and optional cilantro.
